- You need 1 of Grill mates, belgian-style white ale seasoning mix (found in the spice section).

- Chop up onion and garlic and Sautee along with the mushrooms in a large pan with 2 tablespoons of EVOO until the onions are tender. Halfway through the cooking process add a splash of red beer..
- While the onions are cooking generously coat the chicken with the white ale seasoning.
- Remove the mixture from the pan and sauté the chicken until it is cooked all the way through..
- While the chicken is cooking poach your eggs..
- Remove chicken and add about 1/2 cup of red beer, just enough to de-glaze the pan and and create a little sauce..
- Add the chicken then the onion mixture back to the pan and cook until the sauce thickens and everything is heated thoroughly..
- Place the poached egg on top of the chicken and serve with a side salad. Very delicious and low carb!.
